  1. 2.5 cups Basmati rice uncooked
  2. as per taste Salt
  3. 8.5 cups water for boiling
  4. 1/2 tsp oil
  5. For Schezwan Fried Rice:-
  6. 3 Tbsp Oil
  7. 2/3 finely chopped garlic
  8. 1 Tbsp finely chopped ginger
  9. 1 medium size Onion (finely sliced)
  10. 1 medium size Capsicum (finely sliced)
  11. 3/4 cup Cabbage (chopped)
  12. 1 medium size Carrot (finely chopped)
  13. 1/4 cup Spring Onion - Green (chopped)
  14. as per taste Salt
  15. 5-6 Tbsp Schezwan Sauce
  16. 1/2 tsp Black pepper powder
  17. 4 Tbsp Soya sauce
  18. 1 tsp chilli oregano sauce
  19. 1 tsp Apple cider Vinegar (or Vinegar)
  20. 2 tbsp spring onion greens (scallion greens) for garnishing

Steps to make to make Schezwan Fried Rice

  1. Rinse the rice and soak in water for 30 minutes. Then remove the rice from the water and drain.
  2. Boil water in an aluminium vessel for rice. Then add salt, 1/2 tsp oil. Add drained rice in hot water. Cook over medium-high heat until the rice is al-dente (firm but fully cooked). Turn off the gas.
  3. Strain the rice through a sieve and allow to cool completely.
  4. Let the rice cool, until you have finely chopped all the vegetables. Blanch Cabbage before chopping.
  5. For Schezwan Fried Rice:- Heat 3 tbsp oil in a large aluminum vessel. Add ginger-garlic and stir for few mins. Add onion and sauté until onion is translucent.
  6. Then add all the chopped vegetables like carrot, capsicum, cabbage, spring onion green and sautē.
  7. Then add salt, soya sauce, chilli oregano sauce, vinegar and schezwan sauce. Mix all the vegetables well in the spices.
  8. First add 2 cup cooked rice and mix it by spatula. Again add remaining 2 cups cooked rice and mix well. Similar way add all rice in veggies mixture. Combine the rice with the veggie coated sauce mixture gently without breaking the rice.
  9. Check the taste and add more salt, pepper and Schezwan sauce if necessary Garnish with 2 tbsp springonion greens (scallion greens)
  10. Serve Schezwan Fried Rice hot with Manchurian.
  11. If any leftover Szechuan fried rice. Don't worry, keep it in refrigerator and next day use it to make Pan/Tawa Egg Fried Rice and garnish with few crushed kasuri methi leaves (dry).
