During that time about 25 years back, #mayonnaise was not readily available as nowadays and veg mayonnaise was alien during those times. There are many versions. This is my version of Veg Russian Salad prepared as per my taste.. I have used French beans instead of Green peas ( as I didn't have peas). Carrots and peas / french beans has to be cubed and steamed or boiled only but I have blanched it to retain its beautiful color. Note : For blanching put the veggies in boiling water ( 5 minutes it done ) and immediately put it in chilled water- in this way the veggies will retain its flavour, color and texture. Use the boiled veggie water as Veg Stock.

  1. 1 Big size Potato Boiled and cubed
  2. 1 small carrot cubed and blanched
  3. 9-10 French Beans cut into cubes and blanched
  4. 1 Chilli chopped
  5. 1/4 tsp Chilli flakes
  6. As needed Few sprigs of Cilantro chopped
  7. 1/8 Tsp Salt Or as per taste
  8. 1/4-1/2 Tsp Freshly Crushed Black peppercorns
  9. 2 Tbsps Apple Cider vinegar
  10. 3-4 Tbsp Veg Mayonnaise

Instructions to make to make Veg Russian Salad

  1. After all the vegetables and other ingredients are prepared and the potato and other veggies comes to room temperature, add everything in a bowl, add salt, pepper, apple cider vinegar and mayonnaise too and give it a good mix thoroughly but gently so that the vegetables doesn't get mashed/smashed.
  2. Serve it immediately or chill it further and serve it as an appetizer or side dish.
